Without doubt, cupcakes are great for any occasion (even when there’s no occasion, really). So here’s an addition to your cupcake recipes – chocolate chip cupcakes with a rich chocolatey taste that’s refined sugar-free! So grab an apron and your kid(s) – these yummy cupcakes are just waiting to be made! 🙂

Ingredients

Cupcakes

  • 1 ¼ cups plain flour
  • ½ teaspoon baking powder
  • ¾ cup Chocolate FANGKS
  • 125g unsalted butter, melted
  • 3 eggs, lightly beaten
  • ½ cup milk
  • 1 teaspoon vanilla essence
  • ½ cup sugar free chocolate chips

Choc Buttercream Icing

  • 250g unsalted butter, softened
  • ½ cup FANGKS chocolate
  • 1 tablespoon milk
  • 1 teaspoon vanilla essence
  • 1 tablespoon sugar free Chocolate chips

Directions

Preheat oven to 180C

  1. Sift in the flour, baking powder and FANGKS into a mixing bowl. Stir through the melted butter, eggs, milk and vanilla essence until thoroughly combined. Add the choc chips and stir until just combined.
  2. Dollop evenly into a 2 x 6 hole patty pan lined cupcake tray, filling each hole only 2/3 of its capacity. Bake for 20-25 mins until a skewer inserted comes out clean. Stand in the tray for 2 minutes before removing to a wire rack to cool completely.
  3. To make the icing, beat the butter until light and creamy. Add the FANGKS, milk and vanilla and beat until light and fluffy.

Cooking time: 25 minutes
