Rainbow food is all the rage right now, and it’s a trend we are absolutely embracing! This unicorn-coloured cheesecake is perfect for wowing the little guests (and the big ones too!) at the next birthday party.


  • Base
  • 1 cup almond meal
  • 1 cup oats
  • 1 tsp ground cinnamon
  • 2 tbsp Natvia
  • 65g melted unsalted butter
  • Filling
  • 400g cream cheese, at room temperature
  • 400ml thickened cream
  • 1/3 cup Natvia
  • 1/2 tsp vanilla extract
  • 2 tbsp strawberry Fangks
  • pink, purple, orange, yellow, green and blue natural food colouring


  1. For the base, mix together the almond meal, oats, Natvia and cinnamon. Add the melted butter and combine.
  2. Press into a lined springform cake tin and place in the fridge while you make the filling.
  3. For the filling, beat the cream cheese until smooth. Add the Natvia and beat until well combined.
  4. Add the cream, vanilla and strawberry Fangks and mix until smooth.
  5. Divide the mixture evenly into 6 bowls and add a different colour food colouring to each bowl.
  6. Pour the filling on top of the base, one colour at a time. Freeze the cheesecake for 10 minutes between each layer to prevent the colours running together. Return to the fridge for 1-2 hours to firm up completely before serving.
